Don't Cut the Cheese!

Since I was a little girl, I have loved cheese. There was not a dish I could come up with that could not be made better by adding cheese. Cheese has been a staple in my diet my entire life. You can imagine my growing horror, then, when I realized that my body is beginning to tolerate it less.

Recently, I have begun to realize that after eating dairy products, I begin hacking like I have emphysema. That's absolutely ridiculous! Even you, cheese? I've already had to cut back on wine (I'm sure my girlfriends are choking on their wine reading this, but I swear, it's true!)! What's next, a good steak? Before I know it, I'll have to be a freaking vegetarian!

Please, if anyone knows of a cheese that takes as wonderful as mozzarella and cheddar, but does not cause copious amounts of phlegm, do share! What fun is growing up if you can't enjoy your favorite food?!
